The ingredient of Fish Soup

  1. 2 tablespoons olive oil
  2. 1 fennel bulb large, trimmed chopped and feathery fronds reserved
  3. 1 leek large, trimmed and chopped
  4. 6 1/3 cups fish stock
  5. 1 1/8 pounds cod fillet skinned and roughly chopped
  6. 7 15/16 ounces seafood pack, selection, drained
  7. 4 tomatoes roughly chopped
  8. 3 saffron strands

The instruction how to make Fish Soup

  1. Heat oil in a large pan and cook fennel for 5 mins or until softened. Add leek and cook for 2 mins. Add stock and bring to a boil. Add cod, mixed seafood and tomatoes and simmer gently for about 5 mins until fish is just cooked. Add saffron and season. Serve garnished with chopped fennel fronds.
