  3. 4 1/4 cups vegetable stock
  4. 1 2/3 cups whipping cream
  5. 7 ounces watercress thick stems removed
  6. 5 1/4 ounces spinach baby leaf
  7. 7 ounces potatoes peeled and grated
  8. 2/3 cup milk
  9. 1 tablespoon horseradish sauce
  10. beets shaved, for garnish
