Really good! Feel like it needs more meat but flavor is amazing! Great light soup

The ingredient of Simple Thai noodle soup

  1. 1 fresh root ginger good knob, peeled and roughly chopped
  2. 2 red chillies seeds removed, optional, roughly chopped
  3. 2 stalks lemongrass tough outer layers removed, roughly chopped
  4. 3 garlic cloves peeled
  5. 1 handful fresh coriander a few sprigs reserved and chopped
  6. 2 teaspoons vegetable oil
  7. 1 tablespoon coriander seeds
  8. 2 pinches ground turmeric
  9. vegetable stock small jug
  10. 1 handful rice noodles
  11. 1 11/16 cups coconut milk
  12. 1 handful tiger prawns raw, peeled, the shells and heads can be reserved for making stock in another recipe
  13. 3 Thai fish sauce splashes, to taste
