The ingredient of Curried Pumpkin Soup

  1. 2 tablespoons olive oil
  2. 1 onion chopped
  3. 1 clove garlic chopped, optional
  4. 2 teaspoons red curry paste
  5. 3 1/3 pounds pumpkin peeled, seeded and chopped
  6. 4 1/4 cups vegetable stock
  7. cilantro to serve

The instruction how to make Curried Pumpkin Soup

  1. Heat the oil in a stock pot on a medium heat. Sautu00e9 the onion, garlic (if using), and curry paste for 3-4 min until the onion is tender and the mixture is aromatic. Add the pumpkin, stock and 2 cups water and season to taste. Cook for 20-25 mins until the pumpkin is very tender.
  2. Allow soup to cool until it can safely be puru00e9ed using a hand blender or food processor. Process soup until smooth, then reheat on low and season to taste. Serve topped with cilantro.
