  1. 4 apples large, not overly ripe, diced
  2. 1/2 cup sugar
  3. 5 1/4 tablespoons butter
  4. 1 cinnamon stick
  5. brown sugar
  6. 1/2 cup sugar
  7. 1 2/3 cups whipping cream
  8. 1 15/16 cups mascarpone

  1. Saute the apples in a skillet on low heat with the sugar, butter, and cinnamon. Stir carefully until softened and slightly golden. Remove from heat and set aside.
  2. Whip the cream together with half the sugar until it thickens. Beat the other half of the sugar together with the mascarpone until smooth and homogenous.
  3. Mix the cream and mascarpone mixtures together and refrigerate.
  4. Divide the cream mixture between small serving dishes and top with apple. Sprinkle with brown sugar and caramelize with a kitchen torch.
